Need a hearty meal, but are trying to lose weight? Amy’s Tuscan Bean & Rice is filling, tasty, and my personal favorite from the Amy’s line of soups. I can’t say enough about the power of beans, no pun intended. Beans are an awesome source of polyphenols and protein as well as being rich in antioxidants, copper, folate, iron, magnesium, manganese, phosphorous, potassium.

Lentils, if they aren’t part of your diet, this soup is a great way to get them on the go. I often eat this soup as a compliment a salad to make a complete wholesome meal. Lentils are not only great for getting fiber, but they also have potassium, calcium, zinc, niacin and vitamin K, lean protein, folate and iron.

Thai Coconut (Tom Kha Phak)
Do you like Thai food, or maybe you are curious about it? The Thai Coconut (Tom Kha Phak) is simply amazing! Exotic meets rich and organic, this soup makes the soul smile. The lemongrass gives the coconut milk the perfect kick, and if you ask me, you can never go wrong with shiitake mushrooms.
